A Little Bit of Lemon on a Rainy Day

Hi all!
Its a cold and gloomy day and all I want to do is stay inside and drink some tea…but I figured I’d share a new recipe with you!

Sometimes I just don’t have enough time in the morning to make a bowl of oatmeal and I don’t want to make a smoothie and wake Zach up, so I am always looking for something to make ahead of time and just grab as I run out the door.
So lately I have been making a lot of loafs, and I just found this recipe that Zach and I both seriously love! And it’s also dairy free if that is something you are looking for too! Its perfect to grab as you’re on the go, have for dessert.. and even a late night snack.

Hope your enjoy as much as we do!

Lemon Almond Loaf:
For the bread you will need –
-1 1/2 cups all-purpose flour
-1/2 teaspoon salt
-1 teaspoon baking powder
-1 cup granulated sugar
-2 tablespoons lemon zest (about 2 lemons)
-3/4 cups unsweetened almond milk (I love Califia Farms Almond Milk)
-1/2 cup vegetable oil
-2 large eggs
-1 teaspoon fresh lemon juice
-1 teaspoon vanilla extract
-1 teaspoon almond extract – really bring out that almond flavor!!
For the lemon glaze you will need –
-1 cup powdered sugar
-1 1/2 tablespoons fresh lemon juice
-1 teaspoon almond extract
-slices almonds to sprinkle on top!

1. Preheat oven to 350 and spray your loaf pan with cooking spray and set aside.
2. In a large bowl, whisk together the flour, salt, and baking powder. In a small bowl, combine sugar and lemon zest. Rub together with your fingers until fragrant. Whisk into the flour mixture. Set aside.
3. In a separate medium bowl, combine the almond milk, oil, eggs, lemon juice, vanilla, and almond extract.
4. Slowly add the wet ingredients to the dry ingredients. Stir until combined. Pour batter into prepared loaf pan.
5. Bake for 55-60 minutes, or until toothpick comes out clean. Place the loaf on a cooling rack and cool for 15 minutes. Loosen the sides of the bread with a knife. Carefully remove loaf from pan. Let cool completely on wire rack.
6. While the bread is cooling, make the lemon glaze. In a small bowl, combine powdered sugar, lemon juice, and almond extract. Whisk until smooth. Drizzle the glaze of the lemon almond bread. Sprinkle sliced almonds over the bread. Cut and serve.
