Vanilla Cake Cake Cake!

I just have to share this!

For Labor Day I made some cupcakes for a bbq our sister-in-law and her husband were having, and it was the best cake recipe I have ever I have to share it with you all!
So if you are looking for a delicious, fluffy, flavorful vanilla cake, here’s my best –

1 and ¼ cup cake flour*
1 teaspoon baking powder
¼ teaspoon baking soda
¼ teaspoon salt, to taste
½ cup unsalted butter, room temperature
¾ cup granulsated sugar
2 egg whites
1 tablespoon vanilla bean paste (or 2 teaspoons vanilla extract)
¼ cup plain yogurt, room temperature
½ cup milk. room temperature (2% or whole preferred)
*If you don’t have cake flour on hand, measure 1 and ¼ cups all purpose flour into a medium sized bowl then remove 2 and ½ tablespoons of the flour. Replace the 2 and ½ tablespoons all-purpose flour by adding 2 and ½ tablespoons cornstarch. Whisk the mixture for about 1 minute then sift.

This cake batter will be thicker than your used to, thats okay! The milk and yogurt make the cake SUPER soft and moist. 2% or whole milk is much more creamy, stay away from 0 fat yogurt because it contains a lot of gelatin which could change your cakes texture. And the cake flour adds the perfect amount of crumb and makes the cake much lighter.
Bake at 350 for 16 minutes.

This batter makes about 36 cupcakes, but you can always freeze batter and save for later
