Butternut Squash Risotto With Mushrooms

This delicious fall recipe is so easy and delicious!

For those of you that go butternut squash crazy when you feel the leaves starting to change, you will love this!

And what I love so much about risotto is that you could make this a delicious lunch, a simple side dish, or a hearty dinner!

Here is the recipe!


Ingredients 1 cup arborio rice1 pound butternut squash peeled and diced into 1/2-inch chunks10 ounces mushrooms sliced3 cups vegetable broth5 garlic cloves2 tablespoons olive oil2 tablespoons butter1/2 teaspoon salt1/4 teaspoon pepperasiago cheese finely grated, for garnishInstructions Heat olive oil in a large 5 quart saute pan over medium heat. Add butternut squash, salt, and pepper. Cook for 15 minutes, stirring occasionally. Use a pan sufficiently large so that the butternut squash chunks sit in a single layer on the pan.
Add mushrooms and garlic to the pan, sautéing for a few minutes.

Coffee Walnut Cake

Okay, this cake is a game changer!
If you loooooove coffee, you will absolutely love this cake!

I made this for Juniper's first birthday...obviously not for her to eat but for our family to enjoy.

I wonder what she would have acted like if I gave her a cake with straight up coffee-grounds in it...

And then I made this again a few days later for our life group and it was eaten up...I had a hard time with stopping at just one slice!

This cake is intended to be 2 layers, but one of the cakes ended up falling on the floor when I made it for Junie's birthday, so I had to make another batch and the cake ended up being 3 layers! Whoops!
So to compensate for that, I doubled the recipe for the icing.
I made the regular recipe for a 2 layer cake for our life group.
But regardless of the size cake, I decided that it tastes a lot better and the coffee comes through a lot more if you double the amount of coffee grounds that you put into the icing.

Come And Sit With Me

We weren't getting along very well the other day and I really had no idea why.
She had so many toys to play with and I just wanted to sit back and browse my phone because I was still trying to wake up - but still, her tears persisted.


I put down my phone and sat on the floor and like a miracle, she stopped crying, crawled to her toy box, picked out a toy and brought it near me and started playing with it. I had sat on the floor to play with her in order to see if she would stop crying and it was as if, to her,  I was invisible, as she went on and played with her toys joyfully by herself - and I just sat and watched.
 - What had just happened? I was just sitting in the rocking chair on my phone while she was on the floor with her toys and she was throwing a fit. And now I scoot down to the floor to sit with her and the tears cease and she proceeds to play by herself? -
I was confused.
