Salmon Burgers with Crispy Sweet Potato Fries!
A week or so ago it was soooo beautiful and sunny outside, it really felt like spring!
And when the weather is warmed, I automatically think of burgers on the grill.
Well, I didn't grill these, and they aren't your typical burgers, but they sure did put me in the spirit of spring!
To make these salmon burgers even more delicious, I sandwiched them in pretzel buns, smothered some sundried tomato pesto that I found at the store, and toped with sliced avocado.
And what is a healthy burger without sweet potato fries? So I made those too :)

Salmon Burgers
Ingredients:
- 1 jar of sundried tomato pesto from your favorite grocery store, I used this one.
- 8 ounces of crumbled feta cheese
- 1/3 cup of crushed saltines
- 1 large egg, lightly beaten
- 1 small, finely chopped, red onion
- 2 tablespoons fresh dill
- 1 pound salmon filet, skin removed, cut into cubes
- 2 tablespoons olive oil
Instructions:
- Combine feta, saltines, egg, red onion, and dill. Add salmon to the food processor; pulse until coarsely chopped and then add to feta mixture.
- Mix lightly but thoroughly. Shape into 8, 1 inch thick patties.
- In a large skillet, heat oil over medium-high heat. Add patties in batches and cook until golden brown - 3-4 minutes on each side.
- Serve on pretzel buns, with pesto, lettuce, and avocado slices.
